Beetroots, commonly known as beets, are a popular root vegetable used in many cuisines around the world.
Beets are packed with essential vitamins, minerals and plant compounds, some of which have medicinal properties. What’s more, they are delicious and easy to add to your diet.

Serving – 2 people
- 4 medium beetroots
- 2 Carrots
- few pickled gherkins
- 2 tbsp Olive oil
- 1 tbsp Vinegar
- 1 tbsp Lemon juice
- Salt and Pepper to taste
In a pot, boil the beetroots and carrots for 20 mins.
Refresh it under tap water, let cool and dice.
In a bowl, place the diced beetroots and carrots.
Drizzle with vinegar, lemon juice, olive oil. Season with salt and pepper.
Toss the rest of the ingredients together,in with the beetroot and carrots.
Serve with pickles on the side.
